Bergamot (Citrus aurantium var. Bergamia) is a small, roughly per-shaped citrus fruit that grows on small trees called bergamots. It is a cross between lemon pear and Seville orange or grapefruit. Bergamot production is mainly limited to Ioanion, a coastal region in the province of Reggio Calabria, in southern Italy, where the soil and climatic conditions are very favorable for its cultivation. It is also cultivated in the Ivory Coast, Argentina and Brazil, but in no other part of the world does it fruit with the same yield and quality of gasoline. Bergamot takes its name from the Italian city of Bergamo, where its oil was first sold, and it has become a symbol of the entire region and the city. The fruit is inedible and is cultivated for the production of its essential oil. Bergamot essential oil is extracted from the rind of ripe fruit and is widely used in perfumery for its sweet freshness. Bergamot oil is also used for flavoring purposes eg. Earl Gray tea and the so called althea drops, in candy making, and indeed most people know it from Earl Gray tea.
